Blackberry Muffins

Here's a simple recipe for delicious blackberry muffins from scratch:

Ingredients:

- 1 and 1/2 cups all-purpose flour

- 1/2 cup granulated sugar

- 2 teaspoons baking powder

- 1/2 teaspoon salt

- 1/2 cup milk

- 1/4 cup vegetable oil

- 1 egg

- 1 teaspoon vanilla extract

- 1 cup fresh blackberries

Instructions:

1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.

2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

3. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.

4. Add the wet ingredients to the dry ingredients and stir until just combined.

5. Fold in the blackberries.

6. Scoop the batter into the muffin cups, filling each about 3/4 of the way full.

7. Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.

8. Allow the muffins to cool in the tin for a few minutes before removing them to a wire rack to cool completely.
